The finest cheese with a mix of cow and goat’s milk used in the recipe is made in late spring and early summer when the cows freely roam the surrounding mountain pastures and local goat’s milk is rich and creamy.Throughout the year, the cheese maintains a bold assertive, fruity flavour accentuated by a gentle acidity that intensifies as the cheese ages. The Perenzin Family have been making cheese for 4 generations. They practice a unique blend of modern, innovative cheese making, whilst remaining true to local history and traditions. This pure goat’s milk cheese is made in the Valle del Piave in the province of Belluno. When young, the wheels are wrapped in leaves from local walnut trees which impart a delicate herbaceous character to the cheese as it matures. We supply the cheese, flowers, crackers and dried fruit to make your cheese tower a show stopper. Making it an easy addition to your event, you put in your order and we make it happen for you with no stress as it also includes delivery and assembly of your tower onsite (within a 1Okm radius of Fremantle).

How much cheese do I need?
About 70-100g of cheese per person is ideal for an after-dinner course. Double that if you are making it the main attraction!
When should I order my tower?
Always order your cheese wedding cake well in advance so you can be sure that the cheese will be available and perfectly ripe on the day. We suggest a minimum of one month prior to the event.
How should I display my tower?
Make sure you buy, hire or make a great cake stand - we offer a range of display options.
When should I start putting my tower together?
Your cheese tower can be assembled hours before you need it and stored in a cold room or fridge until needed.
How should I put the tower together?
When putting your cheese tower together have a plan in mind. Prepare by unwrapping your cheeses. Place the hardest cheeses with the greatest diameter at the base of the tower (usually a cheddar). The softest and smallest can be placed towards the top of the tower. Then dress with your floral decorations, dried and fresh fruits to your own style. Tip: Ask your florist to assist with wired flowers and just get creative.
What should I decorate the tower with?
There are many styling options: flowers, fresh fruit, dried fruit, herbs, mini bunting, cake toppers, greenery, nuts and honeycomb. You will also want a selection of breads and crackers to serve your cheese with – and don’t forget the knives!
Can I hire items and order from you?
You certainly can. We have a great range of display items - including a cart! -, cheese knives and a florist on hand to help decorate the tower, and your venue if you need!

Order Pick Up
Pick up is from: Fremantle.
You will receive a notification advising when your order will be available for pickup. Please remember to bring something to keep your cheese cool (e.g. an esky with ice packs, a car fridge). Once you arrive at your destination – the cheeses can be refrigerated until ready for assembly.
Order Delivery
Delivery of your dressed tower is included within a 10km radius of Fremantle. If outside of this area, delivery can be arranged - POA. Contact us if you would like to use this option.
