Base: Mas Can Beia Garrotxa Aged in caves to enhance its flavor, Garrotxa has a powdery blue-gray rind and an ivory-coloured interior. Garrotxa`s moist, compact, semi-soft texture packs a lovely white pepper punch, woodsy in aroma with mushroom and earthy back notes. Origin: Spain | Milk: Goat | Weight: 1.7 kilogram
Second: Saint Angel Triple Crème (can also be a blue) Saint Angel has a velvety covering of fine white mould over its rind, and a soft luscious texture. The cheese has a very clean finish on the palate; it is rich, sweet and decedent, finishing with the elegance of a satiny-buttery mouth feel. May swap with the base. Origin: France, | Milk: Cow | Weight: 78O grams
Third: Selected by Will Studd Brillat Savarin Triple Cream Brie Deliciously creamy with a slightly chalky centre when young. Brillat Savarin has a milky aroma, faint lemon tones and velvety texture with an addictive meadow sweet creaminess. Origin: France | Milk: Cow, | Weight: 5OO grams
Fourth: Woombye Blackall Gold Washed Rind This award-winning cheese has a golden, orange coloured rind with occasional, small, fluffy clouds of white mould on the surface. It is a delicate flavoured cheese that will appeal to many palates. Origin: Australia | Milk: Cow | Weight: 4OO grams
Fifth: Milawa Cheese Co. Goat's Milk Camembert Goat The goat camembert is a traditional Normandy style white mould cheese made from pure local goat's milk. From the outside, it might look like your classic Camembert cheese, but cut into that delicious morsel and you’ll find a lighter, almost pearl coloured cheese with a delicate and mild flavour when young, developing an earthy rind as it matures. Origin: Australia | Milk: Goat | Weight: 15O grams
Top: Yarra Valley Dairy Black Savourine Pyramid The texture is firm and slightly crumbly when young and softens as it matures, becoming creamy under the rind. The paste has a delicate goat’s milk flavour with notes of roasted almond, while the rind becomes piquant over time with a delicate dusting of vegetable ash that provides a striking contrast to the white cheese within. Origin: Australia | Milk: Goat | Weight: 11Og

When should I order my tower?
Always order your cheese wedding cake well in advance so you can be sure that the cheese will be available and perfectly ripe on the day. We suggest a minimum of one month prior to the event.
How should I display my tower?
Make sure you buy, hire or make a great cake stand - we offer a range of display options.
When should I start putting my tower together?
Your cheese tower can be assembled hours before you need it and stored in a cold room or fridge until needed.
How should I put the tower together?
When putting your cheese tower together have a plan in mind. Prepare by unwrapping your cheeses. Place the hardest cheeses with the greatest diameter at the base of the tower (usually a cheddar). The softest and smallest can be placed towards the top of the tower. Then dress with your floral decorations, dried and fresh fruits to your own style. Tip: Ask your florist to assist with wired flowers and just get creative.
What should I decorate the tower with?
There are many styling options: flowers, fresh fruit, dried fruit, herbs, mini bunting, cake toppers, greenery, nuts and honeycomb. You will also want a selection of breads and crackers to serve your cheese with – and don’t forget the knives!
